San Choi Bao

This is a chinese dish called San Choi Bao. It's like tacos but using lettuce cups instead of taco shells. 'San Choi' means lettuce and 'Bao' means bun. It's the only chinese words my boyfriend knows. He calls it 'San Joy Bao' not because he's clever, though it does bring him joy, but because he can't pronounce it properly.
 
Ingredients:
1 iceberg lettuce (we usually just get the cheapest lettuce)
1 onion, diced
1 clove garlic, chopped
500g mince
1 carrot, diced
1 cup mushrooms, diced
1 cup cabbage, chopped
1/2 cup pine nuts
1 tbsp sweet chilli sauce
salt
pepper
  • Heat coconut oil or butter in a frying pan. Sautee the onions and garlic for a couple minutes then add the mince and cook until brown.
  • Stir in the carrot, mushroom, cabbage and pine nuts and let it cook through.
  • Add the sweet chilli sauce and salt and pepper to flavour.
  • Separate the lettuce leaves - try to keep them as cups. Serve
